Simple, golden, crunchy and pack with flavour. Such a good way to prepare your potatoes. Use duck fat to make these potatoes ridiculously tasty!
- Add potatoes to a pan of boiling water. Boil 5 minutes. Drain. Cool. Cut into bite sized bits.
- 15 minutes before eating, heat a large frying pan (or two). Add duck fat/butter/oil.
- Add potatoes in a single layer. Reduce heat. Cook slowly for 15 minutes, turning until crisp. Sprinkle sea salt, optional herb, just before serving.
