Brilliant Breakfasts
Getting up can be a real pain (particularly on a school day) but there are compensations. Breakfast!
Tomato bruschetta
Just about my favourite breakfast. This works with any
full-flavoured tomato. Variety of bread is key here.
Ciabatta picks up all those great flavours. Griddle till
it's marked for authentic effect. This makes for a really
healthy start to the day. Tomatoes are packed with
good things that protect the body from disease and
olive oil is one fat that is actually good for you. Rub a
garlic clove over the bread if you don't want to add it
to your tomatoes. If you want to believe you're on
holiday, put on the shades.
Method
1. Preheat grill or griddle.
2. Chop your tomatoes roughly and put in bowl.
3. Add chopped garlic, plenty of basil,
seasoning, and a drizzle of oil.
4. Griddle or grill sliced bread.
5. Drizzle oil on toast.
6. Pile tomato mix on toast. Eat immediately.
Ingredients
For 1
3 tomatoes or as many as takes your fancy
1 garlic clove, chopped
Fresh basil or a little thyme or oregano
Salt and black pepper
Olive oil
2 slices ciabatta or other open-textured bread
