Fast Turkish Pizzas with Feta
Fast cumin flatbreads make a perfect base for these tasty little beauties – or cook and leave plain to serve with hummus and other mezze.
Method
1. Halve tomatoes. De-seed with a teaspoon. Prep toppings.
2. Make dough by mixing sifted flour, cumin, yogurt, salt.
Roll into a ball. Sit on a floured surface. Divide into 8.
3. Roll out each portion on a lightly floured surface into a very thin circle. Preheat a frying pan and grill.
4. One portion at a time, lift carefully onto the dry hot pan. Cook 1-2 minutes till browned. (Turn, repeat a few seconds if plain for mezze.)
5. Remove. Sprinkle with topping and a little olive oil. Sit it under the grill on a baking tray for 2 minutes or till the bread crisps at the edge.

Cumin flatbread dough
275g/9½oz plain white flour
1 tsp cumin seeds
225ml/8fl oz natural yogurt
Pinch salt
Topping
Cherry tomatoes
A little olive oil
Feta, crumbled
Coriander/parsley, chopped
Black olives, diced
A little red onion, sliced/chopped
Pinenuts
A little salt
Lemon to squeeze (optional)
