Curried Singapore Fried Noodles
Noodles need to rule this Indian-style Chinese, so get your bits finely chopped. Tasty.
Method
1. Cook vermicelli as packet instructions. Drain well.
2. Heat wok on high heat. Add 2 tsps oil. Swirl. Add egg to make as omelette. Remove. Roll, slice thin strips. Reheat wok. Add rest of oil.
3. Add onion, garlic, ginger, chillies, pork, prawns. Cook 1 minute. Chuck in beansprouts. Cook 30 seconds. Add noodles, curry powder, soy sauce. Cook 1 minute.
4. Serve. Top with egg.

Feeds 2-3
225g/8oz rice vermicelli
4 tsps groundnut/sunflower oil
2 eggs, beaten
1 onion, thinly sliced
2 cloves garlic, crushed
Little fresh ginger, grated
2 red chillies, de-seeded and chopped
Cooked pork or prawns (optional)
225g/8oz beansprouts
Pinch curry powder
2 tbsps soy sauce
