henryHenry's the biggest cheese fan I've ever met. In my book it's a cracking ingredient too. You can grate it, slice it, melt it or spread it. All that calcium and protein's really good for you. Stick it on bread and crackers. Slap it on pizzas, chuck it in salads. Visit the deli and the farmers' market and try a range of local cheeses. Enjoy yourself.

Lancashire Cheese Burgers


Who says burgers need meat? Here's the ultimate tasty, healthy cheeseburger.


Method


1. Blitz the bread to make crumbs. Tip them into a large bowl with the cheese, onion, gram flour and herbs.

2. Add the egg, mustard, lemon rind and seasoning. Mix with a fork. Chill the mix in the fridge till needed.

3. Sort the dipping and stacking ingredients before you start to cook.

4. Heat a little oil in a frying pan. Divide the mix into 6 flat burgers. Fry gently for 4 minutes each side or till cooked through and golden. 5. Either Eat bread-free on a pile of any green leaves with apple chutney, ketchup and mayo for dipping. OR Eat breaded in warm buns, pittas or on griddled focaccia with rocket, tomato, red onion and mayo.

110 g/4 oz white crustless bread
175 g/6 oz Lancashire cheese, grated
1 medium onion, finely chopped
2 tbsps gram flour
1-2 tbsps fresh mint, basil, dill, parsley or coriander
1 large egg
1 tsp English mustard
Lemon rind
Salt and black pepper
Sunflower oil


Dipping

Ketchup
Apple Chutney
Mayo

Stacking

Buns, pittas, or focaccia
Rocket
Thinly sliced tomato
Sliced red onion
